Buffalo Meat Recipes
Many beef recipes are interchangeable with buffalo and all you need is to modify your cooking style a little bit as buffalo meat contains less fat. The taste is also not very different from beef. In fact, buffalo meat has a rich and fuller flavor. When cooking buffalo meat one has to remember that since buffalo meat has less fat it will cook faster as the heat does not encounter layers of fat. In beef, the presence of fat between muscles causes marbling and slows down the cooking process. Because the buffalo meat cooks faster extra care needs to be taken that the meat does not get overcooked and dry. Here is one of my favorites
Ingredients
six cups of seasoned bread cubes
half a cup of uncooked wild rice
one pound ground buffalo meat
two third cup of finely chopped celery
2 teaspoons of thyme
two third of a cup of chopped pecans
2 teaspoons of sage
1 apple peeled and chopped
2 teaspoon of salt
half teaspoon of crushed red pepper
11 cups of water
4 T low sodium bullion.
Preparation
Mix half a cup wild rice and low sodium chicken bullion with water and bring it to boil, once it comes to boil reduce the heat and let it cook for one hour. Meanwhile mix ground buffalo meat, sage, pepper and salt. Fry it until it is done. In a large bowl mix the cooked buffalo, apple, pecans and drained wild rice. Mix the bread cubes with the liquid from the wild rice until the cubes have absorbed all the liquid and are soft. Mix this with the buffalo meat and rice. Take a baking dish and coat it with baking spray and put buffalo meat and rice along with the bread cubes, cover the baking dish and bake in 325º oven for 90 minutes, after this uncover and bake for another 15 minutes. This preparation can easily serve six individuals.
Grilled
Ingredients
one pound of buffalo meat shaped like a loaf
Barbecue sauce
three jalapenos ( cut lengthwise)
Preparation
Make the ground buffalo meat into a loaf. Jalapenos peppers are cut lengthwise and frozen. Frozen pepper spikes are then pushed into the meat loaf. Place the loaf on a grill and cover it. Grill the loaf slowly and use the barbecue sauce to keep it moist. Once fully grilled the loaf will look rich red in color slice and serve. Generally one pound of meatloaf serves four individuals.
Ingredients
3 pounds of buffalo ribs
1 tablespoon of Worcestershire sauce
2 teaspoons of common salt
½ cup of ketchup
¼ cup cider vinegar
¼ teaspoon of ground pepper (fresh)
½ cup of minced onions
1 teaspoon of paprika
1 clove garlic, minced
1 teaspoon of dry mustard.
Brown the buffalo ribs in a thick walled iron pot or a dutch oven with a coating of cooking oil. Once the ribs are sufficiently browned pour all the other ingredients over it cover the oven and bake at 350º for 1 ½ hour. Remove the lid and bake for another half hour. Three pounds of buffalo ribs can serve six individuals.
