*Elk, moose, deer stroganoff*

1.5lbs of ground meat or sliced boneless top sirloin
2 tbsp butter
1.5 cups beef broth or 1 pack of onion soup mix
2 tbsp of kethup
1 tsp salt
1 clove garlic chopped or pressed
3 cups of sliced mushrooms
1 medium chopped onion (1/2 cup)
3 tbsp all purpose flour
1 cup sour cream or plain yogurt
hot cooked noodles or rice (egg noodles taste best)

Cut meat across grain (if using sirloin)
melt butter and cook meat, stirring until brown.
reserve 1/3 cup of broth. stir remaining broth, ketchup. salt, and garlic into the pan. Heat to a boil, reduce to low.
Cover and simmer until meat is tender (10mins)
stir in mushrooms and onions. cover and simmer until onions are tender (5mins)
shake reserved broth and flour in tightly covered container, gradually stir into the meat mix.
Boil and stir 1 min., reduce to low heat.
Stir in sour cream, cook until heated through.
Serve over hot cooked noodles.
