Sauted Duck Topped With Onion And Carrot Cream Gravy

Wild duck meat is juicy, with a dusky flavor and hence it remains a favorite with the gourmets the world over. The juices in the duck meat blend well together with the seasoning. This gives the duck meat a wholesome flavor. Onion and carrot gravy infuses well with the succulent duck meat to give an interesting flavor that leaves your taste buds tingling. The ingredients for this mouthwatering rare duck delicacy are:

For the marinade:

1 cup boneless duck

¼ cup Worcestershire sauce

½ cup Red wine

½ tsp. Garlic paste

1 tbsp. Soy sauce

1 tbsp sesame oil

For the gravy:

1 cup wild duck broth

1 cup washed peeled and pureed carrots

1 cup finely cut onions

1tsp. Chili and ginger paste

½ tsp. Red chili powder

1 tsp. Red pepper flakes

1 tsp. Ground nutmeg

1tbsp butter

Salt as per taste

¼ pint of fresh cream

Thoroughly wash and clean the duck meat and if using frozen duck meat then allow it to thaw for at least 2 hours and then wash it. Boil the meat in a pan and save the broth for the gravy. Take the duck meat out and dice. Leave the cut pieces aside in the pan after extracting about 1 cup liquid for the broth. Drain the remaining water from the pan and keep the pan with the diced duck meat aside until the marinade is prepared.

Mix all the ingredients of the marinade, Worcestershire sauce, red wine, soy sauce and garlic paste and pour it over the diced duck in the pan. Let it stand for about an hour.

It is recommended that while the marinade seeps into the meat, make the gravy. For preparing the gravy, add the butter in the frying pan and let it melt and heat. Put ground nutmeg and red chili flakes. Saute for about half a minute. Add the finely chopped onions to it and saute till they turn light brown in color. Put the chili ginger paste and red chili powder and stir fry for a couple of seconds; then add the pureed carrot and the duck broth and let it simmer for about 5 minutes. Cover the pan and leave the gravy aside.

Take another frying pan and add sesame oil to it. After it heats add the marinated diced duck pieces to it. Let the duck pieces turn brown and then turn them. Brown them again and turn around the pieces until all sides turn crispy brown. Take care not to burn them. Once the meet is stir fried add the pieces to the gravy. Let the duck pieces simmer in the gravy for another 5 minutes. It may be a good idea to add the leftover marinade. This saucy mixture would lend a tangy and spicy tinge to the dish. Put the sauted duck with gravy in a casserole. Whip the fresh cream briskly. Lace the duck in gravy with the cream. This preparation is sufficient for about 3 to 4 people. The dish is sumptuous and can be relished with fresh bread or rice.
